When it comes to food and health, real fruit has it all. Research continues to find that eating whole apples, berries, cherries, grapes and many other fruits guard our health against the development of certain cancers and cardiovascular disease. One class of these powerful protective biochemicals found in whole fruits are called polyphenols.
Polyphenols are unique naturally occurring molecules found in whole fruit and have been shown to increase nitric oxide activity within the cells that line blood vessels called endothelial cells. High levels of nitric oxide are essential to the health and vitality of these blood vessel cells. When levels of nitric oxide fall endothelial cells can be injured by “bad” cholesterol called LDL. Nitric oxide prevents the oxidation of LDL so the endothelial cells cannot be injured from the inflammation process that oxidized LDL free radicals can trigger.
Real fruit protects endothelial cells by limiting the oxidation of “bad” cholesterol or LDL.
But be careful. The word ‘fruit’ shows up in the title of many processed fruit products and snacks making them sound healthy and good for you. However, food scientists have shown that most of the natural present and protective polyphenols found in real fruit have been destroyed or left out in the manufacturing process of fruit products.
Dr. Sara Arranz explains, “These polyphenols need to be treated with acid to extract them from the cell walls of fruit. . .” Dr. Arranz is from the Council for Scientific Research, Madrid, Spain and is currently working at the Institute of Food Research, Norwich. She is able to measure the non-extractable polyphenols from apples, peaches and nectarines and has seen the total levels rise to five time the non-extractable level. It seems, processed fruit products leave the good stuff behind.
Dr. Paul Kroon, also working with Dr. Arranz explains that the body, unlike the manufacturing process of fruit products for sale knows how to break down and use these beneficial bioactive compounds from the fruit. “In the human body these compounds will be fermented by bacteria in the colon, creating metabolites that may be beneficial, for example with antioxidant activity.”
Research group leader, Professor Fulgencio Saura-Calixto, stated, “These polyphenols are major constituents of the human diet with important health properties. To consider them in nutritional and epidemiological research may be useful for a better understanding of the effects of plant foods in health.”
Fruit is even better for you than thought.
